Did you know that France alone produces more than four hundred varieties of cheese? Learn about Bleu d'Auvergne, Caprice des Dieux, Fleur du Maquis, and much more as you complete this project. Cheese is enjoyed by many cultures -- both human and microbic.
You will be using some of the sites listed below for the World Wide Web station of this project. For an outline of the assignment and a list of the stations, scroll down to the assignment outline.

Outline for a Mini Unit on French Cheese

Objectives:
- Learn how cheese is made and learn facts about cheese in general.
- Learn about the different categories of cheese (types of milk used, raw versus pasteurized milk, texture).
- Develop an appreciation for various types of French cheeses through a cheese tasting activity.
Length: 2 periods
Introduction
- Brainstorming: What comes to your mind when you think about cheese?
- What expressions do you know containing the word cheese?
- What do you know about cheese?
- What kind of cheese do you know?
- Write down one or two questions you may have about cheese.
Period One: Library
Students will use the resources provided to complete the activities at the following stations.
- Station #1: Cheese Books
- Station #2: History of Cheese.
- Station #3: The Basics of Making Cheese.
- Station #4: Raw milk/Pasteurized Milk: the Difference.
- Station #5: World Wide Web
Period Two
Students taste a minimum of ten French cheeses. Students are provided with basic information about each cheese. Students use the information and their tasting experience to fill out an appreciation sheet for each cheese. They also complete the following stations:
- Station #6: Keeping cheese in good condition,
- Station #7: The art of cutting cheese,
- Station #8: The legend of the Camembert.

France was an imperial world power from the seventeenth century to the twentieth century. The French explored, conquered, and colonized many regions of the world during this time. The French language is still spoken in many areas of the world. In general you will gain a better understanding of the French influence in the world; and you will learn about a specific region where French is or was spoken.
Countries or Departments:
Students will be assigned one of the countries, states, or French Departments listed below:
Algeria, Andorra, Belgium, Burkina Faso (Upper Volta), Central African Republic, Chad, Democratic Republic of the Congo (Zaire), Djibouti, French Guinea, French India, French Polynesia, French Southern and Antarctci Territories, Gabon, Grenada, Guadeloupe, Guinea, Haiti, Ivory Coast, Kampuchea (Cambodia), Laos, Lebanon, Louisiana, Madagascar, Mali, Martinique, Mauritania, Morroco, New Caledonia, Niger, Reunion Island, St. Pierre et Miquelon, Senegal, Switzerland, Syria, Tahiti, Togo, Tunisia, Vanuatu, and Vietnam.
Presentation Format: Your teacher will assign a presentation format. This might be an essay, a poster, an oral presentation, or an electronic presentation like Power Point or a web page.
Content: You must include:
- The country's or department's name in both French and English
- If an essay - an introductory paragraph
- History - explain the history of the French presence in your country or department
- Geography - include the location, geographical features and climate for your country or department
- People - describe the way of life of the people - cultural activities, education, famous people
- Politics and Economics - type of government, economic activities, currency, and population
- The French Factor Today - Is French still a factor in your country? Explain.
- If an essay - a concluding paragraph
- Visuals - map and flag or coat of arms
- Analysis - Would you recommend a visit to this country? Support your recommendation.
- Bibliography
- Research notes must be handed in with your project.
Resources:
Be sure to consult encyclopedias for basic information. You will find that articles are organized under subheadings which match the information that you need to find. The library also has a collection of books that will provide indepth information.
Basic Statistical Information:
Use the CIA World Fact Book. This is an online almanac that includes geographical, political, and social information. There is a good map for each country.
For more links go to the Almanacs and Statistics section of the Reference Desk. The BBC and Library of Congress sites are particularly good for this assignment.
